How to make meat soft and silky like the restaurants does ?

Method 1 - Velveting

Here the meat is tenderized in an egg-white, cornstarch & vinegar (/Chinese rice wine)  mixture for 30+ minutes, then cooked briefly (a minute) in oil or simmering water with a small amount of oil .

Method 2

Mix with chopped / bone-less meat pieces with - Baking Powder / Soda - ( about 1/2 spoon for 500 gms) and keep in refrigerator overnight . Then meat in morning and soak in Vinegar for 30 mins, this will help to remove bad taste of baking soda & tenderize meat more. Be sure to wash the meat well again before booking to remove Vinegar.
